Curried Tuna Salad Lettuce Wraps

Ingredients
- 2 cans tuna in EVOO, drained
- 1-3 Tbsp of The Clothes Make the Girl’s homemade mayo
- 2 Tbsp onion, diced
- 2 Tbsp celery, diced
- 1 Tbsp roasted sunflower seeds
- 1 Tbsp raisins
- Salt, pepper, and curry powder to taste
- 6-8 whole romaine lettuce leaves, washed and patted dry (other types of lettuce would work, too)
- Medium-sized mixing bowl
Combine all ingredients (except the lettuce leaves) in a medium-sized mixing bowl. Please note that all add-in measurements are approximate as we rarely measure. We simply adjust the mayo, onion, celery, sunflower seeds, raisins, and seasonings to our liking, so feel free to do the same. Spoon mixture into lettuce leaves and serve. Refrigerate any leftovers in an air-tight container.
Variations: Occasionally, we change things up by replacing the sunflower seeds with roasted cashews, trying different types of curry powders, and adding other kinds of Whole30 compliant dried fruit. All variations turned out well.
